2021 Semillon

Adler Springs, Mendocino

Sourced from Alder Springs Vineyard in Mendocino, this 81% Semillon and 19% Sauv Blanc is a real gem. Bright and beautiful, highlighting its bright citrus character by aging exclusively in stainless steel and not allowing any Malolactic fermentation. Completely unfiltered to keep every flavor and aroma present, we made sure this was never pumped and only used gravity to move the wine around. Although a little more time consuming, this made sure that every floral note was preserved on this incredibly delicate wine. Labeled at 12.1% ABV, it actually sits closer to 11.5% ABV, which means it's going to become an instant classic.
